Jump to Recipe

If you are looking for a snack that is simple, flavorful, and truly satisfying, these thyme and olives breadsticks are exactly what you need. They bring together the richness of olive oil, the bold taste of zaatar, and the saltiness of black olives in one perfectly crispy bite.

Moreover, they are very easy to prepare at home. You do not need complicated steps or special tools. With just a few ingredients, you can create something that tastes like it came straight from a Lebanese bakery.

Why These Thyme and Olives Breadsticks Are So Special

These breadsticks are not just another baked snack. They carry the authentic flavors of Lebanese cuisine. The combination of thyme and olives gives them a deep and aromatic taste that stands out immediately.

At the same time, their texture is what makes them irresistible. They bake into a golden, crispy finish while staying slightly tender inside. Because of that, they are perfect for both adults and kids.

In addition, they store very well. So you can prepare a batch and enjoy them for days without losing their crunch.

Ingredients That Make the Difference

Every ingredient in this recipe plays an important role. The flour creates structure, while olive oil adds richness and depth. Meanwhile, the thyme gives that classic Middle Eastern aroma.

The black olives, on the other hand, bring small bursts of flavor in every bite. They also make the breadsticks visually appealing with their little dark pieces scattered throughout the dough.

Because of this balance, each bite feels complete and satisfying without needing anything extra.

How to Shape Perfect Breadsticks Every Time

Once your dough is ready, shaping becomes the fun part. You can roll it into long thin sticks for that classic breadstick look. However, you can also cut it into small rounds like crackers, just like in the image.

This flexibility makes the recipe even better. For example, if you want something elegant for serving guests, go for the long sticks. On the other hand, if you want a quick snack, the round crackers work perfectly.

As a result, this recipe adapts easily to your needs.

Ingredients

  • 1 kg flour
  • 2 tsp salt
  • 1 tsp grounded black pepper
  • 1 tsp baking powder
  • 1 1/2 cup olive oil
  • 1 1/2 cup water
  • 10 g thyme
  • 1 1/2 cup pitted sliced black olives

Equipment

  • Large mixing bowl
  • Spatula or wooden spoon
  • Disposable gloves
  • Parchment paper
  • Rolling pin
  • Knife
  • Fork
  • Circular cookie cutter
  • Baking tray

Method

Mix the Dry Ingredients
  1. In a large mixing bowl, combine the flour, baking powder, a pinch of salt, and a generous amount of Za’atar. Stir them together until well mixed.
Incorporate the Olive Oil
  1. Pour in the olive oil. Using your hands, “rub” or crumble the oil into the flour mixture until it is evenly distributed and the texture resembles coarse sand.
Form the Dough
  1. Create a well in the center of the mixture and pour in the water. Start mixing and kneading the dough by hand until it begins to come together.
Add Olives and Knead
  1. Add the finely chopped black olives to the dough. Knead the dough thoroughly for about 5 minutes until it is smooth, soft, and no longer sticking to your hands.
Rest the Dough
  1. Shape the dough into a ball, place it in a bowl, and let it rest for approximately 20 minutes.
Roll and Shape
  1. Preheat your oven to 190°C (375°F).
  2. Place the rested dough between two sheets of parchment paper (baking paper).
  3. Use a rolling pin to flatten it into a thin, even rectangle.
  4. Trim the uneven edges to make a clean shape.
  5. Cut the dough into long, thin strips (breadstick style).
  6. Alternative: You can also prick the dough with a fork and use a small circular cutter (or a coffee cup) to make round crackers.
Bake
  1. Place the strips on a baking tray lined with parchment paper. Bake in the preheated oven for about 15 minutes or until they are golden and crispy.
Serve
  1. Let them cool slightly to reach maximum crunchiness. Enjoy your homemade Lebanese-flavored Italian grissini!

Baking Tips for the Best Texture

To get that perfect crispiness, always roll the dough thin. The thinner the dough, the crispier the result. Also, make sure your oven is well preheated before baking.

Another important tip is spacing. Do not overcrowd your tray, because this prevents even baking. Instead, give each piece enough space so the heat circulates properly.

Finally, let them cool completely before storing. This helps maintain their crunchy texture for a longer time.

The Perfect Pair: Thyme and Olives Breadsticks with Feta Dip

Although these breadsticks are delicious on their own, they become even better when paired with a creamy dip. In fact, they go perfectly with our delicious feta dip.

The saltiness and creaminess of the feta complement the crisp texture of the breadsticks beautifully. As you dip each piece, you get a balance of flavors that feels both rich and refreshing.

Because of this combination, they are ideal for gatherings, movie nights, or even as a quick afternoon snack.

When to Serve the Thyme and Olives Breadsticks

These breadsticks fit into so many occasions. You can serve them as an appetizer before a meal. You can also include them in a snack board with cheeses and dips.

Additionally, they are perfect for lunchboxes or quick bites during the day. Since they are easy to carry and do not require reheating, they are very practical.

Therefore, they are not just tasty, but also convenient.

A Simple Homemade Treat Worth Trying

Making these breadsticks at home is a rewarding experience. You control the ingredients, the texture, and the flavor. Plus, the smell of thyme and olives baking in your kitchen is simply amazing.

So, if you want a recipe that is easy, versatile, and full of flavor, these thyme and olives breadsticks are a must-try. Once you make them, you will definitely come back to this recipe again and again.
