Zero-Carb Chicken Crackers

These high protein chicken crackers are a simple, healthy, and low-carb snack made with just a few ingredients. Blended chicken breast is seasoned, rolled thin, and baked until perfectly crispy, creating a crunchy, satisfying alternative to traditional crackers. They are rich in protein, easy to prepare, and perfect for snacking or serving with your favorite dips.

Ingredients
  

  • 500 g skinless boneless chicken breast
  • 2 teaspoons Mexican spice mix
  • 2 teaspoons baking powder

Method
 

  1. Add the chicken breast, Mexican spice mix, and baking powder to a food processor.
  2. Blend very well until the mixture becomes completely smooth and creamy. If needed, add a light drizzle of olive oil to help achieve a smoother consistency.
  3. Transfer the mixture onto a sheet of parchment paper.
  4. Place another sheet of parchment paper on top, then roll it out very thin using a rolling pin.
  5. Place the parchment with the flattened mixture onto a baking tray.
  6. Remove the top layer of parchment paper, keeping only the bottom one.
  7. Bake in a preheated oven at 160°C for about 1 hour and 20 minutes, or until fully cooked and crispy.
