Method
- Add the chicken breast, Mexican spice mix, and baking powder to a food processor.
- Blend very well until the mixture becomes completely smooth and creamy. If needed, add a light drizzle of olive oil to help achieve a smoother consistency.
- Transfer the mixture onto a sheet of parchment paper.
- Place another sheet of parchment paper on top, then roll it out very thin using a rolling pin.
- Place the parchment with the flattened mixture onto a baking tray.
- Remove the top layer of parchment paper, keeping only the bottom one.
- Bake in a preheated oven at 160°C for about 1 hour and 20 minutes, or until fully cooked and crispy.
