Ingredients

  • 2½ cups mayonnaise 600 g
  • 2½ tablespoons sweet chili sauce 50 g
  • 1¼ tablespoons sriracha 25 g
  • 1¼ cups ketchup 300 g
  • ½ cup sweetened condensed milk 150 g
  • ⅔ cup ashta cream 150 g
  • Approximately 1 teaspoon liquid yellow food coloring 5 g
  • Approximately ⅕ teaspoon liquid red food coloring 1 g

Equipment

  • Mixing bowl
  • Whisk
  • Silicone spatula
  • Digital kitchen scale or measuring cups and spoons
  • Airtight jar or container for storage

Method

  1. Combine the base. Place the mayonnaise, ketchup, sweet chili sauce, and sriracha in a mixing bowl. Whisk until evenly blended.
  2. Add the creamy ingredients. Add the sweetened condensed milk and ashta cream. Whisk until the sauce is smooth and free of lumps.
  3. Mix in the coloring. Add the yellow and red liquid food coloring. Stir thoroughly until the color is uniform.
  4. Check the texture and flavor. Scrape down the sides of the bowl and mix again. Taste the sauce; it should be creamy, slightly sweet, and gently spicy.
  5. Serve or chill. Serve with shrimp, chicken, vegetables, or crispy appetizers. Alternatively, cover and refrigerate for 30 minutes before serving.
  6. Store properly. Transfer the remaining sauce to a clean, airtight container and refrigerate promptly. Use a clean spoon each time you serve it.
