Fudgy Sweet Potato Brownies

Soft, fudgy, and naturally sweet, these sweet potato brownies are a healthy twist on a classic treat. Made without flour and packed with rich chocolate flavor, they melt in your mouth while keeping every bite light and satisfying.

Ingredients
  

  • 1 sweet potato boiled (240 g, mashed)
  • 2 eggs
  • 180 g yogurt
  • 50 g cocoa powder
  • 5 g vanilla extract
  • 40 g honey
  • 120 g chocolate chips

  • Large mixing bowl
  • Whisk or spatula
  • Fine-mesh sifter (for the cocoa powder)
  • Baking pan
  • Parchment (wax) paper
  • Oven
  • Knife (for cutting)

Method
 

Prepare the Base
  1. Peel your boiled sweet potatoes.
  2. Place them in a bowl and mash them thoroughly until smooth.
Add Wet Ingredients
  1. Add two eggs and a splash of vanilla extract to the mashed potatoes.
  2. Mix well until combined.
Add Yogurt
  1. Stir in a portion of yogurt and mix into the batter.
Incorporate Cocoa
  1. Sift the cocoa powder into the bowl to ensure there are no lumps.
  2. Mix thoroughly until the batter is a consistent chocolate color.
Sweeten
  1. Add one large tablespoon of honey and stir.
  2. The texture should be thick but not overly stiff.
Prepare for Baking
  1. Line a baking pan with parchment paper.
  2. Pour the brownie mixture into the pan and spread it evenly.
Add Toppings
  1. Sprinkle dark chocolate chips over the top of the batter.
Bake
  1. Place the pan in a preheated oven at 170°C (338°F).
  2. Bake for 25 to 30 minutes.
Cool and Cut
  1. Once finished, remove from the oven and let it cool.
  2. Carefully lift the brownies out using the parchment paper and cut them into squares.
Decorate (Optional)
  1. Dust the brownies with a little powdered sugar.
  2. For a beautiful contrast, garnish with fresh pomegranate seeds, raspberries, or strawberries before serving.
