  • 2 medium ripe avocados
  • 1 medium tomato diced
  • 2 tablespoons chopped spring onions
  • 2 tablespoons chopped fresh coriander
  • ¼ teaspoon ground cumin
  • cup lemon juice
  • cup + 1 tablespoon olive oil
  • teaspoon salt
  • 1 small jalapeño pepper finely chopped
  • Pinch of black pepper

Method
 

  1. Cut the avocados in half and remove the pits.

  5. For a chunkier guacamole, leave a few small pieces of avocado.
  6. For a smoother dip, mash a little longer.
  7. Add the diced onion, tomatoes, cilantro, and jalapeño pepper.
  8. Then, season with salt and black pepper.
  9. Stir everything gently until the ingredients combine evenly.
  10. However, avoid overmixing so the guacamole keeps its fresh texture.
