Ingredients
  

  • 1 kg skinless, boneless chicken breasts cut into bite-sized cubes
  • 1 tablespoon + 1 teaspoon garlic pureed
  • 2 teaspoons mustard
  • 1 tablespoon lemon juice
  • 2 teaspoons apple cider vinegar
  • teaspoons salt
  • ¼ cup plain yogurt
  • tablespoons red pepper paste
  • ½ teaspoon white pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ¼ teaspoon dried thyme
  • ¼ cup extra virgin olive oil

Method
 

  1. In a mixing bowl, combine the red pepper paste, yogurt, mustard, sweet paprika, minced garlic, apple cider vinegar, and lemon juice.
  2. Add the salt, white pepper, and garlic powder.
  3. Take the dried thyme and rub it between the palms of your hands over the bowl to release its natural oils and aroma.
  4. Pour in the olive oil and whisk/mix all the ingredients together until you have a smooth, vibrant orange sauce.
  5. Add the cubed chicken pieces into the marinade. Stir thoroughly until every piece of chicken is completely coated.
  6. For the best flavor and texture, cover the chicken and let it marinate in the refrigerator for 24 hours before cooking.
