Preheat your oven to 180°C.
Place two whole heads of garlic in a baking tray, drizzle with a little olive oil, and roast for 10 to 15 minutes until the cloves are soft.
Slice a soft French bread loaf (or baguette) in half lengthwise using a serrated knife.
In a bowl, take room-temperature butter and mix in ground black pepper, a pinch of dried chili flakes, and finely chopped fresh parsley.
You can substitute parsley with coriander, oregano, or thyme if you prefer.
Add a pinch of salt and mix everything together until smooth.
Once the garlic is roasted and slightly cooled, squeeze the soft cloves out of their skins into a bowl and mash them thoroughly.
Mix the mashed garlic into the butter and herb mixture.
Using the back of a spoon, spread a generous layer of the garlic butter mixture onto the cut sides of the bread.
Place the bread in the oven at 165°C for about 5 minutes until it starts to toast slightly.
Remove the bread from the oven and top it with a thick layer of shredded mozzarella cheese. You can also add some parmesan cheese for extra flavor.
Switch the oven to the broiler (top heat) and put the bread back in for 3 to 5 minutes.
Watch it closely until the cheese is completely melted and starts to turn a light golden brown.
Remove the bread from the oven and slice it into even strips to create breadsticks.
Serve warm.
