These caramelized tomatoes are a simple, yet elegant dish made by roasting fresh tomato wedges with olive oil, garlic, thyme, and a touch of sugar. As they bake, the tomatoes become tender and slightly sweet with rich, concentrated flavor. Perfect as a side dish, topping, or appetizer, this recipe brings out the natural sweetness of tomatoes with minimal effort.

Ingredients
  

  • 4 medium tomatoes
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • A pinch of black pepper
  • 2 sprigs fresh thyme
  • 3 tablespoons + 1 teaspoon olive oil
  • 7 garlic cloves

Method
 

  1. Peel and crush the garlic cloves.
  2. Cut the tomatoes into wedges, keeping the stem attached for decoration (see video for clarity).
  3. Arrange the tomatoes in a baking tray, skin side down.
  4. Drizzle with olive oil, then season with salt, black pepper, and sugar.
  5. Distribute the crushed garlic evenly between the tomatoes.
  6. Add the thyme sprigs over the top.
  7. Bake at 100 degrees C, for 10 to 12 minutes or until the tomatoes are tender and slightly caramelized.
