Method
- Peel and crush the garlic cloves.
- Cut the tomatoes into wedges, keeping the stem attached for decoration (see video for clarity).
- Arrange the tomatoes in a baking tray, skin side down.
- Drizzle with olive oil, then season with salt, black pepper, and sugar.
- Distribute the crushed garlic evenly between the tomatoes.
- Add the thyme sprigs over the top.
- Bake at 100 degrees C, for 10 to 12 minutes or until the tomatoes are tender and slightly caramelized.
